Veggie eggs

Benefits: High protein, improves digestion, low calorie, good source of potassium, high in vitamin C and antioxidants.

Ingredients

1-2 courgettes

1-2 cherry tomatoes

3 medium or large organic eggs

Salt and pepper to taste


Instructions

1. Cook eggs (scrambled or an omelette work best)

2. Season to taste

3. Add cherry tomatoes and courgettes to frying pan cook for 2-3 minutes
