Chickpea Salad

Benefits: Protein-rich, a great source of antioxidants, and rich in Iron, Zinc, Folate, and Potassium.
Ingredients:
1/2 red onion
1/2 red bell pepper
1/2 orange bell pepper
1 cup cherry tomatoes
1 cup of chickpeas
1 handful of wild rocket
1 handful of watercress
1-2 spring onions
2 tbsp pumpkin seeds
Instructions
Cook chickpeas as per instructions, seasoning with salt and pepper
Wash the rocket and watercress, dry, and place in a bowl
Cut vegetables to preference (you may wish to lightly cook to create a warm salad)
Add vegetables to the bowl and mix
Add chickpeas and mix
Serve and sprinkle pumpkin seeds on top
