Tofu and Spinach burgers with Sweet potato fries

Benefits: High in protein, slow-releasing carbs, a good source of iron, magnesium, and potassium.


Ingredients

1/4 tbsp coconut oil

3/4 cup gluten-free oats

1 medium onion chopped

1 tbsp paprika

1 sweet potato chopped into wedges

15 ounces firm organic tofu

16 ounces spinach

Salt and pepper to taste


Instructions

1. Crumble tofu and mix all ingredients together in a bowl

2. Allow mixture to sit for a few minutes so oats can absorb some of the liquid

3. Make patties with hands and fry in a little coconut oil

4. Cook for 6-10 mins on each side

5. Wash and peel sweet potato, cut into wedges season with salt and pepper cook in oven for 30 minutes on gas mark 6

6. Serve burgers with salad and sweet potato wedges
