Rocket salad

Benefits: Good source of protein, rich in good fats, and contains bitter foods which stimulate the digestion system


1 Butternut squash cubed

1-2 spring onions

1 cup green lentils

1 bag of wild rocket

1 cup cherry tomatoes

1 tbsp olive oil

2 tbsp pumpkin seeds

Pinch salt n pepper

Juice ½ lime


  1. Roast butternut squash and leave to cool

  2. Cook lentils as per instructions

  3. Wash rocket, cherry tomatoes and mix in a bowl with olive oil, pumpkin seeds, spring onions and season with salt n pepper

  4. Add butternut squash and lentils to mixture and mix again

  5. Squeeze juice from the lime and serve
