Rocket salad
Benefits: Good source of protein, rich in good fats, and contains bitter foods which stimulate the digestion system
Ingredients
1 Butternut squash cubed
1-2 spring onions
1 cup green lentils
1 bag of wild rocket
1 cup cherry tomatoes
1 tbsp olive oil
2 tbsp pumpkin seeds
Pinch salt n pepper
Juice ½ lime
Instructions
Roast butternut squash and leave to cool
Cook lentils as per instructions
Wash rocket, cherry tomatoes and mix in a bowl with olive oil, pumpkin seeds, spring onions and season with salt n pepper
Add butternut squash and lentils to mixture and mix again
Squeeze juice from the lime and serve
