Spring Detox Salad With Quinoa and Roasted Vegetables

Ingredients
1/2 yellow bell pepper
1 -2 spring onions
1 cup mushrooms
1 cup cherry tomatoes
1 cup quinoa
2 courgettes
Fresh thyme
Fresh dill
Salt and Pepper for taste
Instructions
Cook quinoa as per instructions add 1 tsp of salt, once cooked set aside
Cut all vegetables into medium chunks place on a baking tray or grill pan drizzle with oil and add fresh dill
Grill vegetables until crisp, once cooked leave to cool
Place vegetables in a bowl with quinoa and mix, season with fresh thyme, and season with salt and pepper for taste
