Protein flapjacks

Benefits: High source of plant-based protein, provides a level of potassium, high in fibre, contains healthy fats, and slow-releasing carbs.


Ingredients

30g plant-based protein powder

200g oats

handful hazelnuts

1 banana

1 tsp cinnamon

1 tsp bicarbonate soda

1 tsp vanilla essences

3 tbsp coconut oil

5 prunes


You will also need a 10com or 20cm loose-bottomed cake tin.


Instructions

1. Soak prunes in a cup of 100ml boiling water to soften for 5 minutes

2. Heat 2.5 tbsp coconut oil on a low fire

3. Blend banana with coconut oil, prunes ( include water) and a tsp of bicarbonate

4. Once blended pour into a bowl and add oats, cinnamon, and vanilla essences

5. Mix ingredients together

6. Crush hazelnuts and add to mixture

7. Use a smudge of coconut oil to grease the tin

8. Pour mixture into tin even out the mixture

9. Cook for 20 minutes on gas mark 4 or 180 degrees

10.Once cooked let cool before serving
