Cherry Tomato Basil Soup

Ingredients

1/2 red pepper

1 bay leaf

1 cup fresh basil

1 tablespoon balsamic vinegar

2 tablespoons olive oil

2 cups vegetable broth, low sodium

3 pounds cherry tomatoes

4 cloves garlic, peeled

Salt and pepper, to taste


Instructions

  1. Preheat oven to gas mark 6

  2. Place tomatoes, garlic, olive oil, and balsamic vinegar onto a baking tray

  3. Bake for 25 minutes stirring

  4. Remove from oven

  5. Add to blender along with vegetable broth, red pepper, and basil

  6. Pulse until soup is smooth

  7. Taste and add salt and pepper as needed
