Sweet Potato and Lentil soup

Benefits: High in fibre, a good source of manganese and folate, low in fat, and high in zinc.


Ingredients

1/2 cup red lentils

2 sprigs of thyme

4-5 medium-sized sweet potatoes

A pinch of salt and cayenne pepper


Instructions

1. Peel and wash potatoes, cut in halves and add to saucepan

2. Add water (to cover 3/4 of the saucepan) add sprigs of thyme and bring to boil

3. Boil for 10 minutes, lower heat and cook for 20-25 minutes

4. Add lentils and bring to boil for 5 minutes, lower heat and cook for 20-25 minutes

5. Add salt and cayenne pepper

6. Place soup in a blender and blend until smooth
