Wild rice salad

Ingredients
¼ tsp ground black pepper
½ cup raw walnut pieces
¾ tsp pink Himalayan salt
1 tsp fresh lemon juice
1 cup dry wild rice, cooked according to package directions and cooled
1 tbsp chopped fresh chives
2 tbsp avocado oil
2 tbsp finely chopped yellow onion
Mushrooms, roughly chopped
Instructions
Toast the walnut pieces over medium-high heat in a large, pan
Cook until you begin to smell their nutty aroma, remove from the heat and transfer to a bowl
Add oil to a pan and return it to medium heat
Cook, onions, and mushrooms
Stir in walnuts and cook for 30 seconds.
Remove the pan, from the heat and add lemon juice, salt, and pepper
Stir well and let cool
Transfer rice to a bowl, add mushrooms and remaining ingredients
Sprinkle with chives
Serve with a fillet of wild salmon {to increase healthy fat intake}
