Vegetable Stew

Benefits: Plant-based, low carbohydrates, low fat, rich in antioxidants


½ packet of closed mushrooms

½ packet of cherry tomatoes

1 yellow or orange bell pepper

1 courgette

Handful of fresh herbs rosemary, dill, thyme sprigs


  1. Chop mushrooms, cherry tomatoes, and courgettes

  2. Lightly fry in a pan with some of the herbs and a pinch of salt

  3. Chop bell pepper into 4-6 pieces

  4. Add pepper to blender with 2 tbsp of water, add remaining herbs and blend until smooth

  5. Add pepper to pan with veg and simmer for 10 mins

  6. Serve with quinoa or butternut squash
