Leafy Green Stir Fry

Benefits: Plant based, full of antioxidants, high in magnesium and rich in fibre


Ingredients

½ bag kale

½ bag spinach

½ bag wild rocket

½ savoy cabbage

½ red bell pepper

½ yellow bell pepper

½ orange bell pepper

½ pak choy chopped

1 packet stem broccoli

1 tsp hemp seed/avocado oil

2-3 spring onions chopped

4–5-piece fresh ginger

Salt n pepper to taste


Instructions

  1. Chop all ingredients into medium strips

  2. Heat oil in a wok

  3. Once the oil is hot, add vegetables and stir fry for 5-10 minutes

  4. Serve with brown or wild rice or wholewheat noodles
