Chinese style Spinach

Benefits: High in iron, supports your immune health and stabilises blood sugar levels


Ingredients

Heaped spinach - leaves & stalks (washed and trimmed)

1 cup water

1 tsp vegetable Boullion

1 tbsp heaped Goji berries


Instructions

  1. In a pan, bring water to boil

  2. Add goji and vegetable stock

  3. Place spinach into pan and cover

  4. Simmer for about 3-4 mins
