Sun-Dried Tomato Pasta

Benefits: Wheat-free, a good source of plant-based protein, anti-inflammatory and a good source of magnesium


1/4 cup sun-dried tomatoes

1/2 medium onion, finely diced

1/2 tsp chilli flakes

1/2 tsp fennel seeds

1 tbsp hemp seed oil

1 red bell pepper, diced

1 tsp smoked paprika

1 tbsp balsamic vinegar

1, 15 oz jar sun-dried tomatoes

1, 15 oz cannellini beans

2 tsp Italian seasoning

4 cloves garlic, crushed

8 oz o Spelt pasta

Salt and pepper to taste


  1. Cook pasta and reserve some of the pasta water when draining off the pasta

  2. Heat up a splash of oil in a large pan and lightly fry the onions and peppers with a pinch of salt, stirring until the onions have become translucent

  3. Stir in the sun-dried tomatoes, garlic and chilli pepper flakes, cook until the garlic becomes fragrant

  4. Toss in your beans, spices and herbs and stir, in the pan for 1-2 minutes to combine

  5. Pour in tomatoes and stir well into the beans

  6. Cook the tomato mixture for about 3 minutes, stirring frequently to help cook the tomato

  7. As the sauce starts to thicken slightly, add in the cooked pasta
