Raspberry soft serve

Benefits: A healthy version of ice cream, a good source of protein, contains natural sugars.


Ingredients

1/2 cup fat-free plain yogurt

1/2 cup frozen raspberries

1 to 2 tablespoons maple syrup

4 medium ripe bananas

Fresh raspberries, optional


Instructions

  1. Thinly slice bananas; transfer to a large resealable plastic freezer bag

  2. Arrange slices in a single layer; freeze overnight

  3. Pulse bananas in a food processor until finely chopped

  4. Add yogurt, maple syrup, and raspberries

  5. Process just until smooth, scraping sides as needed

  6. Serve immediately, adding fresh berries if desired
