Loaded Sweet Potato

Ingredients

1/2 pack white button mushrooms

1 small onion, diced

2 cups barbecue sauce {probably best to prepare in advance}

2 cups shredded Monterey Jack cheese {optional}

4 onions, portion sliced

4 large sweet potatoes

Turkey mince


Instructions

  1. Pierce potatoes in several places with a fork and cook in oven for approx 55 mins

  2. Finely chop mushrooms and season turkey mince

  3. Preheat a large pan over medium-high heat and add the turkey and mushrooms.

  4. Cook, until it begins to brown, and then add small onion diced

  5. Continue to cook, until the turkey is fully cooked and drain excess liquid

  6. Add barbecue sauce to the pan with turkey and mushrooms and stir until heated through about 2 minutes.

  7. Cut sweet potato in half and use a fork to mash some of the potato

  8. Spoon barbecue filling into each of the potato halves

  9. Sprinkle with an equal amount of cheese

  10. Place in oven for five minutes, until cheese is browned and bubbling
