Goji berry soup
Benefits: Provides immune system support, promotes healthy skin, prevents liver damage, and stabilises blood sugar
1 cup dried goji berries
1 chicken thigh
1 large onion, diced
1 small leek
1 small chili, chopped finely
1 tsp cumin seeds
1 bay leave
1 tsp salt
1 tsp pepper
Wash and soak the goji berries for a few minutes to rehydrate them
Add chicken to pot with ½ pint of water and bring to boil simmer and cook for 25 minutes
Add onion, chili, leek, salt, and pepper for bringing to boil for 10 minutes and then let simmer cook for 10 minutes
Add goji berries and cumin seeds.
Stir for another few minutes.
Add the stock, bring to the boil and reduce to a simmer for 10 minutes.
For a vegetarian version remove chicken and add fresh tomatoes and blend at the end of the cooking process for a thicker consistency.
