Garlic and Spinach Lentils

Benefits: High in protein, a good source of fibre, a good source of iron and potassium


1/2 tsp red chilli powder

1/2 tsp turmeric

1 cup split red lentils

1 tbsp butter

1 whole dry red chilli

1 tomato, chopped

2 tsp salt

3 cloves of garlic (large), chopped

4 cups water

9 ounces spinach (frozen or fresh)


  1. Wash the lentils thoroughly in a pan

  2. Add the water, salt and turmeric

  3. Bring it to a boil over medium heat.

  4. Reduce heat and cook, covered, for 15 minutes stirring occasionally

  5. In another small pan, heat the butter

  6. Add dry red chilli, garlic, red chilli powder

  7. Sauté for 1 minute.

  8. Add chopped tomato

  9. Sauté until the tomato has softened

  10. Add the tomato mixture and spinach to the lentils

  11. Adjust seasoning

  12. Bring it to a boil, and serve hot
