Ingredients
1/2 orange pepper
1/2 red pepper
1 cup mushrooms
1 cup cherry tomatoes
1 butternut squash
2-3 sprigs of thyme
2-3 spring onions
3 tbsp oil {Hemp seed, Grapeseed, and or Avocado}
Pinch of dill
Instructions
Pre-heat oven to gas mark 5
Cut Butternut squash in 1/2 and scoop out the seeds
Rub oil on squash and wrap in foil
Place in oven to cook for 45 mins - 1 hour
Slice peppers, mushrooms, cherry tomatoes and place in a pan with dill, thyme and spring onions
Cook on a low heat for 10-15 minutes
Once squash is cooked scoop out 1-2 tbsp to make a deeper hole, fill the hole with the veggie mixture and serve
