Apple Cinnamon mug cake

Benefits: Quick and easy healthy dessert, providing a natural sugar rush.


Ingredients

1/2 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp cinnamon

1 small apple, grated (approximately 1/2 cup)

1 tbsp coconut oil, melted

1 tbsp pure maple syrup

1 large egg

2 tbsp your preferred non-dairy milk

4 tbsp banana flour


Instructions

  1. Add the banana flour and baking powder to a large mug or ramekin and mix

  2. Next, add the coconut oil, pure maple syrup, milk, egg, and vanilla extract, mixing well to combine with the dry ingredients

  3. Finally, fold through the grated apple

  4. Microwave for 2-3 minutes or until cooked through (the mug cake should be soft and springy to touch)
