Tofu spiced chilli

Ingredients

1/2 cup of cannellini beans (3/4 cups cooked)

1/2 cup of chopped onions

1/2 cup of water

1 block of firm tofu

1 cup of chopped carrots

1 tbsp of curry powder

1 tsp of cayenne pepper

2 tbsp of olive oil

3 cups of tomato sauce

4 cloves of garlic, minced

15 oz of black beans (1 1/2 cups of cooked)

Salt to taste


Instructions

  1. Drain the tofu, and crumble into pieces, set aside

  2. Heat oil (avocado or grapeseed oil) in a pot, and sauté onions, garlic, carrots, and curry powder together for 3-4 minutes

  3. Add in beans, tomato sauce, water, cayenne pepper, and tofu

  4. Bring to a boil, then reduce heat and simmer for 40-45 minutes

  5. Add salt to taste

  6. Serve with vegetables or brown rice
