Cucumber and Mint Salad

Benefits: helps cool inflammation and hydrate the body, supports digestion and reduces bloating, and helps the liver metabolise excess estrogen.
Ingredients
1 large cucumber (thinly sliced)
1 small handful of fresh mint leaves (torn or chopped)
2 handfuls of salad leaves (rocket, watercress, or mixed baby greens)
Juice of ½ lemon
1 tbsp extra virgin olive oil
Pinch of sea salt (plus cracked black pepper to taste)
Instructions
Wash and dry your salad leaves and mint.
Thinly slice the cucumber and toss with the greens and mint in a bowl.
In a small cup, whisk together lemon juice, olive oil, salt, and pepper.
Drizzle dressing over the salad and toss gently.
Let it sit for 5–10 minutes for the flavours to settle, then serve immediately.
