Cucumber and Mint Salad

Benefits: helps cool inflammation and hydrate the body, supports digestion and reduces bloating, and helps the liver metabolise excess estrogen.


Ingredients

  • 1 large cucumber (thinly sliced)

  • 1 small handful of fresh mint leaves (torn or chopped)

  • 2 handfuls of salad leaves (rocket, watercress, or mixed baby greens)

  • Juice of ½ lemon

  • 1 tbsp extra virgin olive oil

  • Pinch of sea salt (plus cracked black pepper to taste)


Instructions

  • Wash and dry your salad leaves and mint.

  • Thinly slice the cucumber and toss with the greens and mint in a bowl.

  • In a small cup, whisk together lemon juice, olive oil, salt, and pepper.

  • Drizzle dressing over the salad and toss gently.

  • Let it sit for 5–10 minutes for the flavours to settle, then serve immediately.
