Sweet Potato Salad - Recipe of the month

Benefits: Packed with tyrosine-rich foods (beans, pumpkin seeds, and sweet potato) all of which are good for boosting your mood.


Ingredients

½-1 cup of black beans, rinsed and drained

1 small garlic clove, crushed

1 tbsp oil

1 tsp cayenne

1 orange or yellow pepper

1 handful of pumpkin seeds

1-2 red or green chillis

2 sweet potatoes

Pinch of salt and black pepper to taste

Juice of ½ -1 lime, depending on taste

Instructions

  1. Preheat the oven to Gas Mark 6

  2. Cut sweet potatoes in small - medium sized cubes

  3. Season sweet potatoes with cayenne pepper, salt and pepper, and mix well

  4. Place in a baking tray with a drizzle of oil

  5. Cook until soft and once cooked set aside to cool

  6. Cook black beans as per instructions

  7. Once cooked mix black beans in a bowl with spring onions and peppers

  8. Add the sweet potatoes into the bowl and mix well

  9. Sprinkle with pumpkin seeds

  10. Squeeze juice from lime once ready to serve
