Benefits: A great source of iodine, an essential nutrient for normal thyroid hormone production. Rich in electrolytes to support hydration, and anti-inflammatory, with a source of vitamin C.

Ingredients

  • ½ cucumber, thinly sliced

  • ½ red or yellow bell pepper, thinly sliced

  • 1 tbsp sesame seeds

  • 1–2 sheets nori, finely shredded

  • 1–2 tbsp extra virgin olive oil

  • Juice of ½ lemon

  • Chilli flakes, to taste

  • Fresh ginger, finely grated (optional)

  • Black pepper, to taste

Instructions

  1. Shred the nori into thin strips.

  2. Add the cucumber, bell pepper, shredded nori and sesame seeds to a bowl.

  3. Whisk together the lemon juice, extra virgin olive oil, chilli flakes and black pepper. Add the garlic or ginger if using.

  4. Pour the dressing over the salad and toss gently to combine.

  5. Leave for 5–10 minutes before serving to allow the flavours to come together.

Tip: Toast the sesame seeds lightly in a dry pan for a few minutes before adding them — it gives the salad a lovely nutty flavour and extra crunch.
