Recipe of the month - Breakfast Cookies

Benefits: A cookie that is packed with natural ingredients, a good source of protein, fats, and slow-releasing carbohydrates. Perfect for a mid-morning snack.


Ingredients

1/3 cup hulled tahini

1/4 cup whole wheat flour

1/4 cup pumpkin seeds

1/4 cup sesame seeds

1/4 cup dried cranberries

1/4 tsp cinnamon

1/4 tsp salt

1/2 cup raw sunflower seeds

1/2 tsp vanilla extract

1 egg

1 1/4 cup rolled oats

3 tbsp chia seeds

dark chocolate chips



Instructions

  1. Mix all dry ingredients together

  2. Mix all wet ingredients together

  3. Mix all ingredients together

  4. Scoop onto a baking tray

  5. Bake in the oven for 15 minutes on gas mark 4
