Quinoa Salad

Benefits: High in protein, good source of slow-releasing carbohydrates, contains alkaline foods, and is rich in antioxidants.


Ingredients

1/2 yellow bell pepper

1/2 red bell pepper

1/2 orange bell pepper

1 courgette

1 cup cherry tomatoes

1 handful of rocket

1 cup quinoa cooked

Pinch salt n pepper for taste

Juice from 1/2 lime

Slices of avocado


Instructions

  1. Slice peppers, cherry tomatoes, and courgettes

  2. Lightly cook vegetables in oil for 3-5 minutes season with salt and pepper

  3. Place cooked quinoa in a bowl add vegetables and mix

  4. Add juice from the lime to the bowl and mix ingredients again

  5. Serve with rocket and avocado
