Pumpkin & Veggie Stew

Benefits: Rich in fibre, immune boosting, rich in antioxidants and a good source of beta carotene


Ingredients:

1/2 Pumpkin

1/2 Butternut squash

1 medium-sized leek

1 Scotch Bonnet (add whole for flavour)

1 cup coconut milk

1 Chayote

1 cup split peas

1 cup red lentils

2-3 sprigs of Thyme

2 Bay Leaves


Instructions

  1. Pour 3-4 cups of water into a large saucepan and add split peas and bay leaves. thyme and salt

  2. Bring to a boil and cook on a low heat for 25 minutes

  3. Add Pumpkin, and Butternut Squash bring to a boil and cook for 10 minutes

  4. Add red lentils, chayote, coconut milk, and scotch bonnet

  5. Cook for a further 15 minutes

  6. Add Leeks and then simmer for an extra 10 minutes

  7. Remove Scotch bonnet
