Oat bars

Benefits: Contains natural sugars and low in fats.


1/4 tsp salt

1/4 cup canola oil

1/2 tsp ground nutmeg

1/2 cup ground flaxseed

3/4 cup honey

1 cup dried cranberries

1 tsp vanilla extract

1-1/4 tsp ground cinnamon, divided

1-1/2 cups Rice Krispies

2 tsp stevia

3 cups oats


In a large bowl, combine the oats, Rice Krispies, cranberries, flax, 1 teaspoon cinnamon and nutmeg

In a large saucepan, combine the oil, and honey

Cook and stir over medium heat until all is dissolved

Remove from the heat; stir in vanilla and salt

Stir in oat mixture; toss to coat

Press firmly into a 9-in. pan coated with cooking spray

Sprinkle remaining cinnamon over bars

Cool completely and then cut into bars
