Lime & Chilli Salmon with quinoa

Benefits: Low-calorie meal, high in protein and healthy fats.


½ cucumber

1 tsp chilli flakes

1 cup of quinoa

1-2 tomatoes

1-2 Salmon fillets

2-4 sprigs of parsley

Juice from 1 lime

Juice from ½ lemon


1. Season salmon with juice from lime, chilli flakes, salt, pepper and parsley

2. Place salmon under the grill on medium heat until cooked

3. Cook quinoa as per instructions

4. Wash cucumbers and tomatoes

5. Slice the cucumber and tomatoes place in a dish add juice from lemon, salt and pepper and mix together

6. Serve salmon with quinoa and cucumber and tomato
