#guthealthseries - Carrot, turmeric, and ginger soup

Benefits: Low in calories, a good source of Vitamin A, a good source of fibre , rich in antioxidants.


1 tbsp grapeseed, hempseed, or avocado oil

1 leek

1 cup chopped fennel (optional)

1 cup chopped butternut squash

1 tbsp turmeric powder

2 garlic cloves

2 tbsp grated ginger

3 cups chopped carrots

Salt & pepper to taste


  1. Heat oil in a large pan, lightly fry vegetables until soft

  2. Add water enough to fill half the pan, cook on medium heat for 20 minutes

  3. Once vegetables are cooked add to blender and blend until smooth
