Chickpea and Spinach Curry


½ onion

½ packet fresh spinach

½ leek

1 cup chickpeas (soaked overnight)

1 tsp turmeric

1 tbsp curry powder

1 tsp Pimento seeds

2-3 garlic cloves

400ml coconut milk




  1. Rinse chickpeas in cold water after soaking overnight

  2. Place chickpeas in a bowl and season with salt, pepper, pimento seeds, turmeric , and curry powder set aside for 30 mins

  3. In a pan lightly fry garlic and onion

  4. Add chickpeas, ½ can coconut milk and ½ cup water bring into a pot and bring to boil Reduce heat and let simmer for 60 -75 minutes

  5. Around 45 minutes into cooking add the remaining coconut milk , spinach and leeks
