Chicken and Lentil soup

Benefits: High in protein, low in carbs, low in fat and warming for the body.


Ingredients

1/2 onion

Salt and pepper to taste

1 cup green lentils

2 organic chicken thighs skinless

2 bay leaves

2 sprigs of thyme,

3 slices of fresh Ginger


Instructions

1. Place chicken in a pot, add 4 cups of cold water, thyme, chopped onion, bay leaves, and salt

2. Boil for 10 minutes and then simmer and let cook for 25 -30 minutes

3. Add lentils and ginger bring to boil, lower heat and leave to cook for a further 30 – 45 minutes stirring on a regular basis
