Broccoli Cashew Fried Rice

Benefits: Plant-based meal, full of fibre, a great source of vitamins K and C and folate (folic acid)


Ingredients

1/3 cup toasted cashews

1/2 cup cauliflower rice, cooked and cooled

1/2 teaspoon red chili flakes

1/2 teaspoon grated ginger

1 small head broccoli

2 small brown onions

Instructions

  1. Peel and halve the onions, then thinly slice

  2. Chop the broccoli into tall, thin florets, cutting any remaining stem into thin strips

  3. Heat a generous splash of oil in a wok over medium-high heat

  4. Cook the onion for some 6-8 minutes, or until they are softened

  5. Add the broccoli and continue to cook, tossing regularly, for another 4-5 minutes

  6. Add the cashews and cook for 2-3 minutes

  7. Throw in the cooled rice

  8. Divide between two bowls, top with the cashews, and eat immediately
