Creamy Cherry Tomato Basil Soup

Benefits: Low calorie, anti-inflammatory, plant-based, and an excellent source of potassium.


1/2 cup coconut milk

1 cup fresh basil

1 tbsp balsamic vinegar

2 tbsp olive oil

2 cups vegetable broth, low sodium

3 pounds cherry tomatoes

4 cloves garlic, peeled

Salt and pepper, to taste


  1. Preheat oven to gas mark 6

  2. Toss tomatoes and garlic with olive oil and balsamic vinegar

  3. Spread onto a baking sheet

  4. Bake for 25 minutes stirring once

  5. Remove tomatoes and garlic from the pan

  6. Add to a high-speed blender along with vegetable broth, coconut milk, and basil

  7. Pulse on high until soup is smooth

  8. Taste and add salt and pepper as needed
